The filling, having a particular taste of its own, enables you to get great first courses for very little work; only adding melted butter. Tortelloni is also great in soups.
Preparation: Bring a large pan of salt to a boil, add salt and pasta. Simmer gently for 2-3 minutes. Drain and serve with a sauce.
