Essenza has a velvety structure, a well-developed taste, a tinge of acidity and a fruity aroma. San Giacomo's Essenza is the same cooked must (Lambrusco and Trebbiano grapes) used for producing Aceto Balsamico Tradizionale. The difference is in the aging, where the Essenza aged between 8 and 10 years rather than the 12 years specified as the minimum for the tradizionale consortium.
