Acquerello is the rice grown, aged, whitened and packed in Italy on the Colombara Farm by the Rondolino family. Acquerello is appreciated by some of the most famous professional chefs and according to Alain Ducasse 'Acquerello is the Rolls Royce of rice'.
Acquerello represents the superior form of white rice belonging to the Japonica subspecies. It combines the essential nutritional values of brown rice with the cooking characteristics of superior white rice, absorbing cooking liquids and flavors very well without being sticky, so after cooking the grains become bigger, heavier and tastier thus enhancing all the other ingredients.
The Colombara farm was built in the 16th Century, in the Piedmont region of northern Italy near the town of Vercelli, the European capital of rice. The Carnaroli rice cultivated at Colombara, being the only variety sown since 1997, is 100% pure and therefore produces uncontaminated Carnaroli seeds.

One of the key points to perfection is the aging process. To age properly, the freshly harvested crop must be stored, as long as possible, in unique steel silos at a constant controlled temperature, because during this period the starch, combined with the oxygen, optimizes its culinary characteristics.
