Harbison is a soft-ripened cheese with a rustic, bloomy rind. Young cheeses are wrapped in stips of spice cambium the tree's inner bark layer, harvested from the woodlands of Jasper Hill. The spoonable texture begins to develop in their vaults, though the paste continues to soften on the way to us and then again to you.
Harbison is aged 60-90 days, it is gooey around the edges when young and at full ripeness the edges and ridges of the rind may appear lightly burnished and there may be some blue and white mold on the natural bark strip.
Harbison is woodsy and sweet, balanced with lemon, mustard and vegetal flavors. and pairs well with oaky wines and barrel-aged sour ale.
