Big John's Cajun is a handmade cheese that is made from the milk of local Jersey cows in Northern Utah, the combination of sweet creaminess and spice make it a great addition to any cheese plate.
Beehive Cheese hand-rubs the cheese with a rub developed by local Ogden, UT chef John Dearmin using only the finest ingredients. Big John uses cayenne pepper instead of paprika; more of the recipe Beehive won't reveal as they want to keep the key to the spicy kingdom, but the cheese packs a heated punch as you near the rind.
The cheese as it won already many rewards; a 2nd place in the 2009 American Cheese Society Competition and a 3rd place at the 2011 and 2012 Competition.
